SATURDAY 11h September PROGRAMME

Nigel Bloxham. 
Kick-starting the Main Stage line-up is festival regular, Nigel Bloxham, Chef Proprietor of Weymouth-based eatery Billy Winters and the award-winning Crab House Cafe. What Nigel doesn’t know about seafood isn’t worth knowing! He’ll be around both Saturday and Sunday and is looking forward to sharing his knowledge and passion with you.

John Wright. 
If you have not seen a stage demo by John Wright (local naturalist and author) then you really must catch his performance. John will charm you with his natural wit and huge depth of knowledge on all things wild, a forager who can tell you all about wild mushrooms, seaweeds, maritime plants, shellfish and much more!

Ian Salmon. 
Ian has been working in kitchens since a teenager, starting life as a kitchen porter. Falling in love with the buzz of a busy kitchen, he had found his forte and has never looked back! With a long-standing affiliation with the Stein empire, having previously worked at the Barnes restaurant and captained the kitchen team at St Petroc’s Bistro in Padstow, he is now settled in Dorset and the Head Chef of Rick Stein Sandbanks.

Kirk Gosden. 
Kirk Gosden is the Group Head Chef for Rockfish, which has waterside locations across the South West serving award-winning seafood in their restaurants and takeaways. Focusing on locally caught fresh fish, simply done, both Kirk and Marci Swedrzynski (head chef at Rockfish Weymouth) will have the audience hooked with their seafood passion and expertise.

Mark Woodhouse. 
Mark Woodhouse, Family Director of sponsor Hall & Woodhouse, will be hosting fun and informative Badger beer and cheese pairing tutorials. The Badger beers involved will include the newly launched Fropical Ferret and recently returned peachy classic Golden Glory as well as the popular Golden Champion and Twice Tangled.

Mike Naidoo, Executive Chef at Weymouth’s Catch at the Old Fish Market, has a flair for creating exceptional dishes and a passion for incorporating the finest local and seasonal ingredients. With experience at the forefront of some of Britain’s most acclaimed Michelin-starred kitchens, Pollen Street Social in Mayfair and The Black Rat, Winchester, Mike’s vision at Catch is to showcase the very best that Dorset can offer, putting the abundance and unparalleled quality and freshness of the daily catch front and centre of his elegant dishes.

Duncan Lucas. 
Ever seen a fish full of wine bubbles? Then you must have been to the Festival before! Duncan Lucas is passionate about fish and has worked in the industry for over 40 years. Starting his career in the family business of trout farming, he is seriously knowledgeable and accomplished in the art of fishmongery and holds many awards – be sure to catch his fish filleting demo.

Steven Lamb is a curing and smoking expert, teacher, presenter, culinary consultant and award-winning author. After a background in media, Steven’s food career began nearly 20 years ago when he joined Hugh Fearnley-Whittingstall’s River Cottage team, regularly appearing in the TV series and being instrumental in establishing the internationally acclaimed cookery school on the Devon / Dorset border. It is here that his knowledge of food was fine-tuned and his passion for curing and smoking and other artisan culinary methods was nurtured.
